Clean Pumpkin Pancakes

I love Fall and anything pumpkin!  I was scouring my cookbooks and the internet for a clean pumpkin pancake recipe that was also 21 Day Fix approved.  I took bits and pieces from a few recipes and came up with something pretty delicious!  Only a handful of ingredients, no flour or sugar, and super simple and fast.

INGREDIENTS:

1/4 cup ground oatmeal (I used my coffee bean grinder)

1/4 cup pumpkin puree

2 eggs, slightly beaten

1/4 tsp. baking soda

1/4 tsp. apple cider vinegar

1 tsp. vanilla extract

1 tsp. pumpkin pie spice

a dash of sea salt

  1. Combine ingredients and blend until smooth. (Note: the batter will be thin, but it does cook up, I promise!)
  2. Bake on skillet as you would traditional pancakes, over medium heat.
  3. Serve with a tiny drizzle of maple syrup (optional – or fresh fruit) and enjoy!
