Skinny Pumpkin Spice Latte { vegan }

Who doesn’t love a good PSL in the Fall? I love them as much as the next basic girl, but hate the fat and calories that come with the Starbucks version. So I created this Skinny Pumpkin Spice Latte recipe so I can still be a basic bee and treat myself.

There is a make-ahead creamer involved in this recipe, but it’s pretty simple and makes a decent amount you can use for a few weeks.

Pumpkin Spice Coffee Creamer

In a blender:
1/2 cup dates, pitted (soak in hot water for at least 15 minutes first)
2 tbs pumpkin purée
1 cup milk of choice (I use coconut)
1/4 tsp cinnamon
1/8 tsp nutmeg
1 pinch of salt
1/2 tsp vanilla extract
*Drain the dates before adding to blender. Blend it all up until creamy and smooth. Store in a covered jar, refrigerate. Lasts for a few weeks!

 

To make the PSL:

1 tsp coconut oil
1 Tbs Pumpkin Spice Creamer
1 Tbs coconut creamer (or any)
*Blend for about 30 seconds, you will see the froth start to form on top. Enjoy!
