Creamy Avocado Zoodles

INGREDIENTS:

1 ripe avocado

1/4 cup plain yogurt (or Greek yogurt)

1/4 cup milk

1 tsp minced garlic

2 tbs. lemon juice

2 tbs olive oil

2 tbs parmesan cheese

1/4 cup plain yogurt (or Greek yogurt)

1/4 cup milk

Salt and pepper to taste

2 zucchini
DIRECTIONS:

  1. Combine all ingredients in a blender and blend until creamy. If you find your sauce is too thick, you can thin it out with some additional milk or olive oil.
  2. Use a spiralizer to make the zoodles. Sautee for about 5 minutes on medium heat.
  3. Remove zoodles.
  4. Pour sauce over zoodles and toss.
  5. Sprinkle additional parmesan cheese on top and fresh herbs for garnish if desired.
