This recipe is a “dump and go” that is budget friendly and healthy!
* 8 Chicken pieces, drumsticks, thighs or a combination
* Salt and Pepper, to taste
* 1 can tomatoes, diced
* 1 Red Bell Pepper, diced
* 2 t Fresh Garlic, crushed
* 3 TB Tomato Paste
* 1/2 cup Dry White Wine
1.) Pre-heat oven to350- spray a large oven dish or cast iron skillet with cooking oil
2.) Season the Chicken pieces with Salt and Pepper and place in the oven dish or skillet. (See note)
3.) Scatter the tomatoes and pepper around and over the Chicken.
4.) Combine the Garlic, Tomato Paste and Wine – pour over the Chicken and Vegetables
5.) Bake, uncovered 45 – 60 minutes or until the Chicken is tender and done.
*If you are using a cast iron, you can sear the drumsticks for a crispier skin. Heat up the cast iron on the stovetop, and sear each side of the drumstick for about 3 minutes before adding the rest of the ingredients.
I served it over zoodles for a low carb option, but you could use noodles, rice, quinoa, etc.
